Hey ladies! I was SO stoked yesterday to find out that I can go to ANY LA Fitness anywhere in the country with my membership. I didn't know that before...My plan is to go to the new one in the Pearl District tonight just to check it out and try out their equipment. I went to the one on 82nd on my way home yesterday for the 1st time and that will probably be my primary gym from now on since it is on my way to and from work. Very convenient!
Things have been going well with me. Jeff has been pretty busy with his class (homework and actually going to the class) so that has given me a lot of free time to go work out which is really great.
Also, it looks like I will be heading to Colorado at the end of May to visit my brother and spend the weekend in Colorado Springs and Breckenridge (my bro and his friends are renting a house there). I'm pretty excited to see and hang out with him. I am really cracking down on my eating and trying to work out hard though because there are not many (well, NONE actually) overweight people at the Air Force Academy. I don't want to be the ONE person who visits and looks like a fat cow. ;-) I know I'm not a cow, but you know what I mean...I don't want to feel out of place! haha
Oh! I think I told you both about this recipe, but I want to give it to you guys. Jeff and I actually made it with tuna instead of chicken this past weekend and it was really good! It's not the healthiest but it is a quick and easy thing to make for parties!
Chicken Ball
2 - big cans of canned chicken (all white meat works best) or 3 small cans
2 - 8 oz. cream cheese
1 T - A-1 steak sauce
1 tsp - curry powder
Chopped Pecans
Mix the first 4 ingredients together and roll into ball. Roll the
ball in the chopped pecans until it is completely covered. Refrigerate
and serve with crackers.
I made this for my mom's birthday that we held at our house on Sunday...it was a hit! I used walnuts instead of pecans though because that's what I had...but pecans are REALLY good in it too (almost better I think).
I will make it next time we get together so you guys can try it! ;-)
